Cream Cheese and Cherries

All sweetness and tart

Melts in my mouth

A delectable work of art

Each year she asks

When my birthday rolls around

What shall I make you

A chocolate or a pound

*

No cake

No candles

Just Cherry Delight

It’s all I ever want

I’ll eat it every night

Although she makes it

She’s reminded of fat

Filling my veins with

Cholesterol and plaque

Seems all the good stuff

Wants to hang around

I’ll take my chances

Though it makes me rotund

I never get enough

Until I am stuffed

Today at d’Verse, Misky asked us to write a poem about food. Since my birthday just passed, and my wife made me my favorite dessert, I decided to share a poem I wrote a few years ago.

Cherry Delight
1 9oz grand cracker crust
1 pk 8 oz Cream Cheese
1 can Sweetened Condensed Milk
1/3 cup lemon juice
1 tsp vanilla
1 can of Cherry Pie filling

Beat cream cheese until fluffy. Blend in the condensed milk. Add the lemon juice and Vanilla. Pour into the pie crust and chill in the fridge for 2-3 hours. Top with chilled cherries.

  1. Dwight, some doctors now recommend a high fat/low carb diet for cardiovascular disease. My cardiologist is not one of them, but my results keep him from nagging me too much. I had my heart attack in 2007. The ketogenic diet has kept me off diabetes medication for five years. I had been on metformin for seven years. My heart disease is stable. The carotid arteries are also stable, and the carotid artery I had surgery on in 2008 is still healthy and normal. The two stents in my heart are also still clear.

    Enjoy your cherry delight. The sugar, not the fat, is probably the culprit anyway. I make desserts with stevia. I have seen low-carb cheesecake recipes. Two of my favorite keto desserts are dark chocolate cream cheese fudge with pecans and baked egg custard with nutmeg and cardamom. I haven’t quite mastered the low-carb cheesecake yet!
